What keeps the longest/will this be good on Sunday?
Yes: everything we make is sourdough/naturally leavened. No commercial yeast.
Yes: It's all made with Maine-grown and -milled grains, directly from farmers whenever possible. We do not add in any cheaper flour like most smarter businesspeople do.
No: It is not all certified organic. Everything we get from Rusted Rooster Farm and Misty Brook Farm is certified organic. Some of the Maine Grains flour we get is listed as organically grown (which is not an official standard), but not certified. This is the best we can do with what's available.
Yes: It's all technically whole wheat, meaning the flour contains all parts of the grain kernel: the germ, bran, and endosperm. This gives you more fiber, vitamins, minerals, and FLAVOR.
When people ask us if the bread is white or whole wheat it's always a puzzle to try to figure out what they mean. Did your doctor tell you to eat whole wheat? Does your husband only eat white bread? Are you still afraid of carbs? We never really know, and there's a lot of incomplete/bad information out there.
